Dear Abby’s Spicy Shrimp Appetizers
3 qts. water
1 pkg. (3-oz) Zatarain’s Crab Boil (seasoning)
1 tbsp salt
4 fresh lemons
3 lbs. raw giant shrimp or prawns
2 pkgs. (0.6 oz each) Good Seasons Zesty Italian dressing mix
In large saucepot, combine water, Crab Boil seasoning and salt. Squeeze one lemon and add juice and lemon rind to water. Cover and bring to boil.
Add shrimp to boiling water, immediately turn off heat, and replace cover on pan. After 3 to 5 mintues, when shrimp are cooked (and they turn a lovely pink color), drain and cool enough to handle.
Peel, de-vein and transfer to large bowl. Squeeze juice of the remaining 3 lemons over shrimp.
Marinade: Prepare one package of salad dressing mix according to package directions, then add contents of second package - so that marinade is double strength.
Pour over shrimp; cover and chill overnight to blend flavors.
Serves: 8 to 10
