I was thinking about making a deconstructed dish, and turning salsa into a vegetarian appetizer was one of the first things that came to mind.
I was thinking about having a base of wood-grilled half slices of tomato, a couple of fried red onion rings, a gremolata made of cilantro, lime zest, and garlic, and a sauce we call afterburner made with roasted jalapenos and corn syrup on the side, served with fried polenta instead of chips.
I am just looking for opinions, criticism, or different ideas.
