A great simple recipe for some verryyy tasty potato skins. This recipe uses cheese with onions but you can substitute the onions for maybe bacon or your favourite topping!

Ingredients

[li]3 white potatoes[/li][li]1 Half an onion (finely chopped)[/li][li]Any melting cheese (My favourite is mature cheddar!) (Grated )[/li][li]3-4 tablespoons Cooking oil (Preferably Olive oil or vegetable oil)[/li][li]Big pinch Paprika[/li][li]pinch Cayenne pepper[/li][li]pinch Black pepper[/li][li]pinch Salt[/li][/ul]
Directions
Step 1
Preheat the oven to 180 degrees. Cut potatoes in half lengthways then carve out the centre using a tablespoon. It is up to you how thick you want the potato skins but as you can see in the picture from the picture I like mine a little thick!
Step 2
Place 3-4 tablespoons of oil into a bowl, adding in a pinch or paprika, pepper, salt and cayenne pepper and mix together. The consistency should be runny, if however it is too thick simply add a little more oil.
Step 3
Turn the potatoes flat side down and using a knife pierce the potatoes in the middle a couple of times. This will help cook the potatoes quicker and more evenly. Next rub the spice mixture all over the potatoes preferably using a basting brush as it makes it a TON easier, but if not you can get stuck in with your fingers!
Step 4
Now place the potatoes on a non-stick baking tray with the flat side facing down, place in the middle shelf of your oven and allow to cook for 10 minutes. Then turn the potatoes over and baste the top carved sides of the potatoes with the spice mix before placing in the oven again for another 10 minutes.
Step 5
Now the potatoes should be nice and soft (if not, allow to cook for a further few minutes until they soften), remove from the oven and sprinkle on a little cheese, then a little onion and top with a little more cheese.
Step 6
Return back to the oven for roughly 5 minutes until the cheese begins to bubble and slightly colour, then remove and ENJOY!
