DEPRESSION ERA DOOR COUNTY FISH BOIL
A favorite now, it was also a popular low cost dish in the 1930’s. It wasn’t always served with a lot of melted butter as we know it today, but it was served nevertheless because of its economy and availability of fish in some areas. Served in proportions for family or neighborhood gatherings, a large cooking vessel was needed.
Cook 15 lbs. peeled potatoes whole for 12 minutes in a lot of water. Add 10 peeled onions and cook 5 minutes more. Add 10 lbs. fish fillets and 5 c. salt and cook 8 minutes more. With slotted spoon serve directly on plates, drizzle with melted butter.
