DEPRESSION ERA FLUFFY CORNMEAL MUFFINS

These were favorites with the Johnny Cake crowd and were made either with sugar or without.

When made without sugar they were used as a meal with syrup and bacon or fried pork.

When sugar was added they were served with butter as part of a meal or lunch.

Sift together:
1 c. cornmeal
1 1/2 c. sifted flour
2 t. baking powder
1 t. soda
1 1/2 t. salt
3 t. sugar

Beat:
1 egg, until thick

Add:
1 c. sour milk or buttermilk
4 T. butter, melted

Combine and stir only to moisten. Bake in muffin tins 2/3 full for 20 minutes at 425* F. Serve hot.
