DEPRESSION ERA ICE CREAM CAKE

Also called Cornstarch Cake

Cream:
2 c. sugar
3/4 c. butter - until fluffy

Sift:
2 c. flour
1 c. cornstarch
3 t. baking powder

Add alternately with:
1 c. milk
Dash of salt

Add:
some vanilla or almond extract

Beat 5 egg whites, till stiff but not dry; fold in carefully

Bake in layer cake pans for 25 minutes or until toothpick comes out clean. Oven at 350* F.

This cake was also used for a royal birthday, adorning the center of the table at many gala celebrations. The frosting or ising is a sugar saver which complimented the cake, especially since 2 c. were used for the batter.

FROSTING:
Mix:
2 T. flour
1/2 c. sugar

Add:
1/2 c. milk

Blend well and cook till thick; stir and cool.

Beat in:
1/2 c. shortening
1/4 t. salt
1 c. powdered sugar
Some flavoring

Beat very well till light and fluffy. Can be colored as desired.

ORNAMENTAL ICING:
2 c. owdered cugar
3/4 c. shortening
1/4 t. cream of tartar
Dash salt

Beat well. Dip spoon in water occasionally; add flavoring.
