DEPRESSION ERA MUFFINS WITH VARIATIONS

These morsels are excellent just plain but a cook with ingenuity can add a lot of delicious surprises to them.

Sift together:
1 c. flour
1 1/2 t. baking powder
1/2 t. salt
1 1/2 T. sugar

Melt:
1 1/2 T. butter

Add:
1 c. milk
1 egg, well beaten

Mix and add to flour mixture. Mix only to moisten. Grease muffin tins well. Preheat oven to 425* F.; bake for 25 minutes.

For variations:

Add: t. jelly in center before baking

Mix: Chopped dates, raisins, nuts or apricots in flour

Add: Chopped crisp bacon to batter

Add: 1/4 t. each ginger, cinnamon, allspice and cloves to flour

Add: Any kind of berry

Make Sally Lunn by using 2 eggs, saving whites to beat stiff and fold in.
