DEPRESSION ERA WHOLE WHEAT BREAD II

Another good whole wheat bread recipe using some white flour and molasses. People of the 1930’s didn’t have a large variety of foods, but what they did have was power packed with nourishment. This one is another popular recipe from that era.

Scald:
3/4 c. milk

Add:
4 T. sugar
3 1/2 t. salt
6 T. shortening
3/8 c. molasses

Let cool to lukewarm. Combine yeast cakes in 1 1/2 c. warm water in very large bowl for mixing. Stir until dissolved. Add milk mixture. Combine 4 1/2 c. whole wheat flour and 2 c. sifted white flour; add half to liquid. Beat until smooth. Stir in rest of flour and knead. Cover with shortening and proceed like for white bread.
