Dessert Pizza

Pizza Crust

1 cup warm water
1 pkg dry yeast
1 teaspoon granulated sugar
1 teaspoon salt
2 tablespoons oil
2 1/2 cups flour

Dissolve the dry yeast in the lukewarm water. Mix all ingredients together. Knead for a couple of minutes then place in a covered bowl. Let rise about 30 minutes before rolling out.

Or just buy a prepared pizza dough from the supermarket.

Pizza Topping

2 tablespoons butter, melted
4 tablespoons cinnamon sugar (4 tbs sugar, 1-1/2 tsp cinnamon), divided use
2 cups mascarpone cheese
1 tablespoon heavy cream
2 tablespoons lemon juice
1 teaspoon lemon zest (from 1 lemon)
2 cups mixed berries, fresh or thawed

Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper.

Roll out the pizza dough, using a rolling pin, to about a 12 inch round. Transfer the pizza dough to the parchment lined cookie sheet. Brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Remove from oven and cool pizza crust to room temperature before adding toppings.

In a medium bowl, mix together the cheese, cream, lemon juice, and zest.

Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining 2 Tbs of Cinnamon-Sugar. Slice like a pizza and serve.
