Dilly Beef Cartwheel

1 cup sour cream
4 tsp. dry onion soup mix
1 Tbsp. prepared horseradish
4 slices large round rye bread
1-1/2 cups shredded lettuce
1-1/2 cups shredded endive
1 medium tomato sliced
6 thin slices roast beef
6 dill pickle strips
1 medium tomato, cut in wedges
Milk
Pitted ripe olives

Combine first 3 ingredients and dash freshly ground pepper. Arrange 2 slices of the bread bottom to bottom to form a large circle; spread with a third of the sour cream mixture. Toss together lettuce and endive; place two-thirds atop of the bread. Top with tomato slices. Place remaining atop lettuce mixture; spread with half of the remaining sour cream mixture. Top with remaining lettuce mixture.

Make 6 cornucopias of beef with pickle in center of each; arrange with tomato wedges atop sandwich. Thin remaining sour cream mixture slightly with a little milk; drizzle over top. Garnish with olives. With thin sharp knife, cut into wedges to serve.

This would be good for a luncheon or a small get together. It is really very tasty.
