Dinner in 25 minutes!
Pot of water - bring to boil - meanwhile - fry sliced bacon; drain and crumble.
Heat olive oil in large skillet, fry 2 bunches escarole, washed, trimmed, chopped - fry to wilt with fresh garlic, salt and pepper.
By now the pot is boiling - spaghetti will cook al dente in no time; drain.
Transfer escarole to serving dish; top with crumbled bacon; transfer drained spaghetti to skillet; add olive oil, fresh garlic and parsley, salt and pepper to taste; tossing well to coat; transfer to serving dish.
