Dirty Rice Loaf
1 TB vegetable oil, 1 onion chopped, 1 celery rib chopped, 1/2 green bell pepper chopped, 2 cloves garlic minced, 1 TB chili powder, 1 tsp ground cumin, 3/4 lb ground turkey, 1/2 lb turkey or beef chorizo sausage meat, 1/4 lb chicken livers finely chopped by hand or in a food processor, 1 cup cooked white rice, 1 cup firm white bread crumbs, 2 tsps hot pepper sauce, 1/2 tsp salt, 2 eggs, 1/2 cup ketchup, (1 can Cajun style stewed tomatoes and/or extra ketchup - optional)
Preheat the oven to 350 degrees. In a large skillet, heat the oil and cook the onions, celery, and green pepper, stirring often over medium heat until the vegetables are softened, about 5 minutes. Stir in the garlic, chili powder, and cumin, and cook for 1 minute.
In a large mixing bowl, use your hands to gently but thoroughly combine the ground turkey, chorizo, livers, rice, bread crumbs, pepper sauce, salt, eggs, and cooked vegetables. In a 13 by 9 inch bake pan, shape the mixture into a 9 x 5 inch loaf, or put it into a 9 x 5 inch loaf pan smoothing the top. Spread the ketchup over the loaf. Bake until the loaf is firm, the top is richly browned, and a meat thermometer inserted into the center of the loaf registers 160 degrees about 1 hour. Let the meatloaf stand in the pan for 10 minutes before slicing to serve. Makes 6 servings.
