I tried a great disposable product that allows you smoke meals indoors in your oven or outdoors on your barbecue (no smoke). It is called Smoker bag by Camerons Profession Cookware. It is a foil bag that has the smoke chip ash in the liner. I made smoke salmon and the bag gave just a perfect amount of smoke flavor. Add salmon, a little wine, a little butter, salt/pepper and cook for 15-20 minutes. EASY!
