DON PABLO?S TORTILLA SHRIMP
32 each Shrimp, raw, large, peeled & deveined (tail on)
Spicy Mexican spices or 1 packet taco Seasoning, your favorite Brand
1 1/2 cups Flour, all purpose
1 cup Water, cold
1 tbsp. Cornstarch
4 cups Bread Crumbs, (Panko) Japanese style
1 cup Tortilla Chips, crushed fine, yellow or white
DIRECTIONS:Wash shrimp; peel the shrimp down to the tail. Using a sharp knife split the back of the shrimp to remove the vein. Rewash the shrimp and pat dry using a paper towel. Place the shrimp into a large bowl.
Add the taco seasoning to shrimp, toss and reserve. Using another bowl combine flour, water and cornstarch. Reserve.
Toss the bread crumbs and tortilla chips together. Reserve.
Set up an assembly line, by placing the bowl of seasoned shrimp along side of the bowl of “batter” and then next to this place the bowl of crumbs. Hold the tail of each shrimp, dip them into the batter and then dredge the shrimp through the crumbs.
Bread all shrimp and reserve either in your freezer or in your refrigerator. Fry to golden brown.
