Double Chocolate Mississippi Mud Bars
1/2 cup butter, softened
3/4 cup brown sugar
1 tsp. vanilla extract
1 large egg
1 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
4 ounces chopped semisweet chocolate, divided
4 ounces chopped white chocolate, divided
1 cup chopped walnuts, divided
Preheat oven to 350 degrees. Line the inside of a 9 inch square baking pan with greased foil. Combine the butter, brown sugar, egg and vanilla in a large bowl and beat until fluffy. Beat in the flour, baking soda and salt. Stir in 1/2 of the semisweet and white chocolates and 1/2 cup walnuts. Spread the batter in the prepared pan. Bake about 12 to 14 minutes until a toothpick comes out clean. Sprinkle the remaining semisweet and white chocolate over the top of the warm bars. Cover the pan with foil and let stand about 5 minutes until the chocolate is melted. Swirl together the chocolate with the tip of a knife. Sprinkle with the remaining 1/2 cup walnuts. Transfer the pan to a rack and cool until firm. Cut into bars.
Makes about 1 dozen bars.
