Dragon Whiskers Salad

DRAGON WHISKERS SALAD

SERVES 3 TO 4

1 pound fresh asparagus
Boiling salted water
1 T. wine vinegar
Pinch sugar
Pinch salt
1/2 t. ginger root, minced
1/4 t. sesame oil

Break off and discard tough ends of asparagus; scrub spears with stiff brush under running water to remove any sand.

Break each spear and tender parts into 2-inch pieces.

Barely cook (4 minutes) in boiling salted water; drain.

Rinse immediately under cold running water; drain.

Combine vinegar, sugar, salt, ginger and sesame oil; marinate “whiskers” in vinegar-sesame dressing a few minutes before serving.

NOTE: Make “whiskers” hot by adding a vew drops Tabasco sauce and ground Szechuan pepper to taste (use sparingly!!!) Also - corn or peanut oil can be substituted for sesame oil.
