4 tablespoons cottage cheese
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Cheddar cheese
1/4 teaspoon salt
1 tablespoon real bacon bits
Preheat oven to 350°F. Spray a donut pan with non-stick spray.
Into a blender, add eggs, cottage cheese, Monterey Jack cheese, and salt. Puree until it is a uniform mixture.
Add Cheddar cheese and bacon bits. Pulse a few times.
Pour the egg mixture into the pan. Fill the rings until they are almost full. Do not fill them to the top or they will become oddly shaped.
Bake for 10 to 12 minutes or until the egg bite springs back when touched.
Remove the pan from the oven, and then remove the omelet bites from the pan.
If desired, you can sprinkle some cheddar cheese over the top and place the bites under the broiler until the cheddar cheese melts.
