E- Z Chicken!

Since the humidity is back and cooking still has to be done - I am going to cheat today and make it simple.

1/2 cup mayo or salad dressing
1/4 cup Parmesan cheese (I am using Pecorino-Romano)
1 teaspoon Italian seasoning
4 boneless skinless chicken breast halves

Combine mayo, cheese and seasoning; place breasts on (electric) grill and brush with mayo/cheese mixture. Grill and baste till done. To serve, sprinkle with additional cheese.

Serving with a large antipasto, crusty Italian bread and fresh brewed iced tea!

If you don’t have Italian seasoning you can use a blend of basil, oregano and marjoram.
