Easy Baklava

1 cup ground almonds
1 cup ground walnuts
2 teaspoons ground cinnamon
8 sheets frozen phyllo dough, thawed
1/4 cup butter, melted
1 1/4 cups sugar
2 tablespoons grated lemon rind
1/4 cup lemon juice
4 tablespoons honey

Combine the almonds, walnuts and cinnamon. Set aside.

Lay the phyllo dough on a flat work surface. Cut each sheet in half. Brush one sheet with 1 teaspoon of the butter and lay it in a greased baking pan. Sprinkle with an even layer of the nut mixture. Brush the next layer with butter and stack on top of the first, sprinkling with more of the nut mixture. Repeat until all sheets are done.

Precut the dough with a sharp knife (baklava is usually cut into a diamond shape). Bake at 350 degrees F for about 20 minutes, and then lower oven temperature to 300 degrees F and continue to bake another 25 to 30 minutes.

While the dough bakes, heat the sugar, lemon rind, lemon juice and honey in a saucepan until bubbly. Pour over the baklava as soon as it comes out of the oven. Let cool completely.
