Easy Beef Slices


1 egg, well beaten
2 T. milk
1 t. salt
1 t .dry mustard
1/8 t. pepper
1/3 c. fine dry bread crumbs
1/4 c. grated Parmesan cheese
8 slices cooked beef, cut about 1/8-inch thick
1/4 c. flour
1/4 c. shortening
8 slices (6 oz.) American cheese
1 can (8 oz.) tomato sauce

Combine egg, milk, salt, mustard, and pepper in bowl. Combine bread crumbs and Parmesan cheese. Dip beef slices in flour to coat on both sides. Dip in egg mixture and coat well. Dip in bread crumb mixture to coat on both sides. Melt shortening in large skillet. Add 4 coated beef slices; brown over medium heat for 1 minute on each side. Transfer to a cookie sheet. Repeat with remaining slices. Top each slice with a slice of cheese. Spoon tomato sauce over cheese. Place under broiler 4 to 6 inches from heat. Broil for 2-1/2 to 3 minutes until cheese is melted and sauce is hot.
