Easy Chicken Cacciatore Bake
1 can Italian-style diced tomatoes, undrained
2 cups zucchini slices, quartered
1/3 cup Shake ‘n’ Bake Original chicken seasoned coating mix
4 skinless and boneless chicken breast halves
1 Tbsp grated Parmesan cheese
1-1/2 cups penne pasta, cooked and drained
Preheat oven to 375° F. In a 13- x 9-inch glass baking dish, toss tomatoes and juices with zucchini slices. Set aside.
Place coating mix in resealable plastic bag. Place chicken in bag and turn to coat. Remove chicken and place breasts over zucchini mixture, laying flat. Sprinkle with Parmesan cheese.
Place in oven and bake 30 to 35 minutes, or until chicken is cooked throughout. Serve over pasta.
