Easy cooking tonight................

Tonight I get of easy -

Patty Melt -

Ground round
creole seasoning

Shape into patties - fry in coconut oil (the patties MUST be big and juicy!)
Top each with a slice of swiss cheese, a slice of yellow american cheese and a slice of havarti cheese - melt cheeses just right!

Serve on toasted rye bread (with caraway seeds of course!) and nice crisp dill pickles.

Potato casserole -

sliced russet potatoes
sliced sweet potatoes
sliced onions

Layer in buttered casserole, placing bits of butter, salt, pepper and parsley on each layer. Bake until potatoes are tender.
