Easy Delicious Oven-Baked Onion and Mushroom Rice

1 cup converted white rice (I use Uncle Ben’s)
1 (2 ounce) package dry onion soup mix (can use 1-1/2 pkgs for a more onion taste)
2 1/2 cups water (for a softer rice use 2 Tbsp more)
1/4 cup soy sauce (or more to taste, use low sodium)
1 (10 ounce) can sliced mushrooms, drained (can use 2 cans if desired)
2 tablespoons oil or butter
1 teaspoon garlic powder (or to taste)
black pepper

Set oven to 350 degrees.
Grease a 2 litre, or larger baking dish (I use my 2 litre Corning Ware baking dish with a lid for this) or any size close to that.
In a medium size bowl, mix ALL the ingredients together.
Transfer into baking dish.
Cover with foil or lid.
Bake for 15 minutes, remove from oven; stir with a spoon.
Return to oven and bake for another 40 minutes, or until rice is cooked.
Remove from oven, let sit for 15 minutes on top of stove.
Fluff with a fork before serving.
NOTE because of the saltiness of the soup mix and soy sauce, there is no need to add any extra salt when baking.
Serve up with additional soy sauce if desired – enjoy!
