Easy Fruit-filled Napoleons

EASY FRUIT-FILLED NAPOLEONS

Preheat oven to 400* F.

You will need:
1 can (21 oz.) pie fruit filling of choice

Unfold on lightly floured surface and cut each piece crosswise into five 2-inch wide rectangles:
1/2 pkg. (17-1/4 oz.) frozen puff pastry sheets, thawed - place on baking sheets

Bake in preheated oven 12 to 14 minutes or until golden; remove to wire racks to cool.

Meanwhile, in bowl, beat on low speed until thickened (about 2 minutes):
1 pkg. (3.4 oz.) pkg. vanilla instant pudding mix
1 tub (8 oz.) sour cream

Fold in:
1 tub (8 oz.) frozen whipped topping, thawed

Split pastry rectangles in half horizontally; spoon about 3 tablespoons filling onto bottom halves; top with 2 tablespoons fruit filling. Cover with top pastry. Drizzle with remaining fruit filling.
