Easy Lasagna

this recipe is pretty quick and you can’t really screw it up.

1 package lasagna noodles
1 1/2" lbs ground beef
1 medium yellow onion, chopped
3 cloves garlic, chopped
1 tablespoon dried oregano
1 jar marinara sauce of your choice
olive oil
2 cups ricotta cheese
2 cups shredded mozzarella cheese

bring a large pot of salted water to a boil. cook the lasagna noodles and drain when al dente. while cooking noodles, brown beef in a large frying pan over med/high heat. add onion, garlic, oregano to meat. when beef is almost cooked, add marinara sauce and simmer about 20 min.

wipe the casserole dish with olive oil on a paper towel. lay noodles lengthwise at bottom on dish. spread a layer of ricotta, a layer of meat mixture, and then mozzarella. repeat this for a total of 4 or 4 layers. top w/ mozzarella and bake for about 30 min. remove from heat and let stad for 5-10 min. cut into pieces and serve! a baby green salad with tomatoes and some olive oil/balsamic vinegar with some parmesan cheese sprinkled on it would go well.

Like all Lasagnas, cooking time is very important for the taste of the lasagna and the softness of the noodles.
I suggest baking for at least one hour, wrapped in aluminum foil, and then bake for another 10-20 minutes without for the cheese to get brownish. The long cooking time while covered makes the lasagna so much tastier on the inside…
