easy main dish recipes

looking for quick, easy, tasty main dish recipes. Preferablly crock pot & make ahead things. Nothing too fancy or with unusual ingredients as my family likes good old fasioned food.

Apple and Brown Sugar Corned Beef

1 corned beef brisket
1 quart apple juice
1 cup brown sugar
1 Tbsp prepared mustard
8 small red potatoes
2 medium carrots, pared and cut into chunks
1 onion, peeled and cut into eights
1/2 head cabbage, cut into chunks

Place all ingredients in large crock pot (cut meat in half if necessary). Stir to mix.

Cook on high for 4 to 5 hours on high or 8 to 10 hours on low. Remove meat and vegetables and some of the cooking liquid. Slice meat thinly across the grain. Serve with the vegetables and some of the liquid.

Use left over corn beef the next day…layer in crock pot with sauerkraut and swiss cheese. Warm and serve on rye bread with 1000 Island dressing!

Marinated Barbecue Brisket

5 pounds beef brisket
2 teaspoons unseasoned meat tenderizer
1/2 teaspoon celery salt
1/2 teaspoon seasoned salt
1/2 teaspoon garlic salt
1/4 cup liquid smoke flavoring
1/4 cup Worcestershire sauce
1 1/2 cups barbecue sauce

Place brisket on large piece of heavy-duty aluminum foil. Sprinkle tenderizer and seasonings on both sides of meat. Pour liquid smoke and Worcestershire sauce over top. Cover and marinate in refrigerator 6 to 10 hours or overnight. Place foil-wrapped brisket in Crock-Pot. {Cut brisket in half, if necessary, to fit easily} Cover and cook on Low setting for 10 to 12 hours. Chill brisket, then cut across grain into thin slices. Before serving, reheat in your favorite barbecue sauce.

Slow Cooked Swis Steak

3/4 cup flour 1 teasp. pepper 1/4 teasp. salt 2 lb. round steak 2 Tbs. butter 1 can cream of mushroom soup 1 1/3 cup water 1 cup sliced onion 1 clove garlic minced 2 teasp. beef bouillon granules

In small shallow bowl combine flour, salt and pepper. Cut steak in 6 pieces. Dredge in flour. In skillet melt butter over med. heat, add steak and brown on both sides. Transfer to slow cooker. Mix remaining ingredients and pour over steaks. Cover and cook on low 8 hrs. or until tender.

Crock-pot Vegetable Beef Soup

Ingredients:

2 to 3 lbs of stew meat
1/4 C. of butter
2 quarts of water
1 tsp. pepper
1 Tbsp. salt
1-1/2 C. chopped carrots
3 medium sized potatoes peeled and cubed
1 C. of chopped celery
2 chopped onions
6 cubes of beef bouillon
1-14 oz. can stewed tomatoes

Brown the meat in butter and add to crock-pot. Add all other
ingredients. Cook on low for 8 hours. You can cook soup in a large
pot on the stove over low heat for 2 to 3 hours.
