Easy Mango Chicken

1/4 c green peppers, chopped
2 T shallots, chopped
2 T butter
1 c mango chutney 1/2 c orange juice
1 c chicken stock
1 T ginger, chopped
4 boneless chicken breasts
1 1/2 c mangoes, cubed
2 t minced garlic

Pound chicken breasts to 1/4" thick. Sauté garlic and shallots in butter. Add chicken. Sauté till done. Remove chicken from skillet. Add chicken stock, mango chutney, orange juice, and ginger. Stir. Simmer for 5-10 minutes until sauce thickens. Return chicken to skillet with cubed mango and green pepper . Heat through. The sauce of this easy and tasty and is great over rice. If you add some steamed broccoli, your dinner is ready! Makes 4 servings.
