EASY WAFFLES

1-3/4 c. sifted flour
3 t. baking powder
1/2 t. salt
2 egg yolks, beaten
1-3/4 c. milk
1/2 c. shortening, melted
2 egg whites, stiffly beaten

Combine flour, baking powder, and salt. Combine egg yolks, milk, and shortening; add to dry ingredients, beating just till blended. Carefully fold in stiffly beaten egg whites, leaving a few puffs of egg white–do not overmix. Bake in preheated waffle baker.
