Egg Scramble Casserole
0 extra virgin olive oil
0 Obrien frozen potatoes
1 tsp. thyme
0 salt and pepper
- Have a 9x13 pan greased with olive oil.
- Line the bottom of the pan with Obrien frozen potatoes.
- Scramble 6 eggs with 1 tablespoon olive oil. Add 1 teaspoon thyme, salt and pepper.
- Pour over the potatoes.
- Bake at 350 degrees for 45 minutes.
Serve hot with Texas toast with blue cheese and brushed first with olive oil.
