Egg Scramble Casserole

0 extra virgin olive oil
0 Obrien frozen potatoes
6 eggs
1 tsp. thyme
0 salt and pepper

  1. Have a 9x13 pan greased with olive oil.
  2. Line the bottom of the pan with Obrien frozen potatoes.
  3. Scramble 6 eggs with 1 tablespoon olive oil. Add 1 teaspoon thyme, salt and pepper.
  4. Pour over the potatoes.
  5. Bake at 350 degrees for 45 minutes.
    Serve hot with Texas toast with blue cheese and brushed first with olive oil.
