Eggplant Heavenly Delightful H.J.s

This is delicious many ways to eat it:
On French Bread, plain with sauce (or dont use bread or use the sauce),
Over spaghetti, as appetizers, just layered in the dish

1 large eggplant
Pam Spray
3 eggs
1½ oz. ranch dressing
salt and pepper, garlic powder to (Your taste)
½ tsp. Italian seasoning
½ c. flour
½ c. plain bread crumbs
½ c. potato chips crushed finely…Lays orginial
1/2 c. Romano grated cheese
⅛ c. Dr. Pepper or Holiday Spice Pepsi
1 can of black olives drained and sliced
Pepperoni sliced thin . . as much as you like
½ c. Mozzarella
½ jar of Marina Sauce. . (Classico 4 cheeses)

Dash of red crushed pepper seeds Optional

Grape oil and little I Cant Believe its Butter in a skillet to brown;
Season skillet with salt, pepper and garlic powder lightly
On Medium to high heat without smoking and brown both sides
Directions
1 Large eggplant.peeled and sliced about ⅛ inch thick
set aside

Glass deep baking dish spray with Pam . . . add little Marina Sauce on bottom

In 1 slightly deep dish;
Add: 2-3 eggs
1½ oz. Ranch dressing
salt, pepper, garlic powder
enough Holiday mix Pepsi or use Dr. Pepper about 1/8 cup.
Beat well

In another slightly deep dish; 8wx11.5x2
Add: Equally enough: flour, bread crumbs, and crushed potato chips to coat the eggplant.
½ cup grated Romano cheese
Salt, pepper, garlic powder, onion powder to your liking
½ tsp. Italian Seasoning
Mix Well.
Dip eggplant in the egg solution, than into the flour mix ¦coat well and can double coat , place in heated skillet brown both sides, remove placing right into glass dish layer with black olives, pepperoni, cheeses and sauce.
Cover and Microwave for 10 minutes.
Serves 4 prep time is about 30 minutes total or Eat just browned with Mozzarella and no sauce H.J. :wink:
