Elfin Fruit Jumbles
1-1/2 cups raisins, seedless
1/4 cup apple juice
2/3 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 cup brown sugar, packed measure
2 tablespoons soft butter
2 cups whole nuts (walnuts or pecans)
4 ounces candied cherries, cut in halves
Soak raisins in apple juice for 1 hour, then drain. Measure flour (without sifting) onto square of waxed paper, add baking soda, and spices, and stir well to blend. Cream brown sugar, butter, and egg in a bowl until fluffy, then add the dry ingredients, mixing well. Next, stir in drained raisins, nuts, and cherries.
Drop by tablespoonfuls onto greased baking sheets. Bake at 325°F for about 12 minutes. Remove from baking sheets and place on wire rack to cool. Store in airtight container for serving later. Makes about 4 dozen.
