ELVIS?S FAVORITE CORNBREAD

2 c. cornmeal
1 c. flour
1 T. baking powder
1-1/2 T. sugar
2-1/2 c. buttermilk
3 large eggs, beaten
1/4 c. canola oOil
Cornmeal
No-Stick Cooking Spray

In a large bowl combine cornmeal, flour, baking powder, and sugar; mix well. Stir in buttermilk, eggs, and oil; mix well. Spray a 10-inch non-stick skillet with cooking spray and sprinkle lightly with a little cornmeal. Pour into the skillet and cook over medium heat until golden brown and cooked until a toothpick inserted into the middle comes out clean.
