English Muffin Bread For Bread Machines

1 cup scalded and cooled milk
1 teaspoon table salt
1/4 teaspoon baking Soda
2 tablespoons vegetable oil or olive oil

1/4 cup Water (95-F to 105-F degrees)
1 tablespoon granulated white Sugar
1 tablespoon Yeast instant yeast (or 1 packet)

3 cups Bread Flour

Heat 1 cup of milk in microwave for about 1-minute or until milk reaches 180 degrees F., but does not boil. Stir the salt and baking soda into the hot milk. Add the 2 tablespoons of oil to the hot milk and stir well. Allow the milk to cool to below 105-F before proceeding.

Heat 1/4 cup of water in microwave for about 20-seconds or until it reaches between 95-F to 105-F degrees. Add granulated sugar to warm water and stir until it dissolves. Stir in yeast until it is dissolved. Set aside for 10 to 15 minutes until the yeast blooms (forms foamy bubbles on top of the water).

Add 3 cups of flour to bread machine. Make a well in the center of the flour.

Pour the warm milk and warm yeast water into well in top of flour.

Set bread machine to regular cycle, large (2-lb) loaf.

It’s normal for the top of the loaf to come out sunken in. The texture and taste of this bread is just like English Muffins and it’s great for toasting.

Makes one 2-lb loaf.
