Since it is cold and snowy here today I decided to spice things up with beef fajitas for dinner tonight.

I used my grill pan to cook some very thinly cut beef which was seasoned with salt, pepper and cilantro. In a separate frying pan I carmelized some onions, red peppers, green peppers, and yellow peppers with chopped garlic and cilantro. As a side I had rice which was cooked with half water and half beef broth with dried chopped onions, dried chopped garlic, and cilantro. When the rice was done I added a can of diced tomatoes with chilis and some salsa. We ate this on tortillas with shredded cheese and sour cream.
