Famous Bootleg Baked Beans by Heloise from 1984
3 strips of bacon, diced
1 small onion, chopped
1 15-oz can pork and beans (packed in tomato sauce)
1 tablespoon brown sugar
2 tablespoons vinegar
2 tablespoons catsup
Dice three strips of bacon and fry. When about half
done, add a chopped small onion.
When the onion is slightly browned, pour off most
of the grease and add a 15-oz can of pork and beans
(packed in tomato sauce), one tablespoon brown
sugar, two tablespoons vinegar, and two tablespoons
catsup. Stir well, then cover the pan with a lid.
Bake the beans slowly in a 300-degree F oven for a
couple of hours. Or, if you prefer, you may
simmer them very slowly on top of the stove for
30-minutes.
