Want a fast, easy soup??
I just wanted enough soup for today - not a large pot and I am pressed for time today.
Using a 1 1/2 - 2 qt. sauce pan - I chopped fresh carrots, celery, onion and cabbage; placed in pot. Filled the pan with cold water; added fresh cracked black pepper, a pinch of salt, chicken bouillon and, chopped fresh celery leaves, chopped fresh parsley. Brought to a boil; when veggies were tender I added some “ring” shaped macaroni (spaghetto type macaroni) and let that cook until macaroni was done.
I didn’t have to adjust the seasonings - but just before done adjust if needed.
Served with crusty Italian bread.
Just a fast tummy warmer on a cold day and not much time spent having to prepare it.
