Fat Free Raisin Bread


3 1/2 cups flour
1/2 cup sugar
1 tbsp baking powder
1 tbsp baking soda
2 tsps cinnamon
1 cup raisins
1/4 tsp salt
1/2 cup applesauce
1/2 tsp lemon peel grated
1 1/4 cup skim milk (room temperature)
1 tsp vanilla
1 egg white, whipped

Preheat oven to 350 degrees. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt. In another mixing bowl, combine applesauce,raisins, lemon peel, milk, vanilla, and egg white. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan(s). Bake for 1 hour depending on pan size.
