First Lady Texas Lemon Cookies

This is a recipe for Texas Lemon Cookies
by Lady Byrd Johnson, published in a newspaper
article in 1964.

Texas Lemon Cookies

1/2 cup butter, softened
1 cup white granulated sugar
1 egg, beaten
1 Tablespoon cream
zest of one lemon
1/2 teaspoon lemon extract flavoring
1 1/2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder

Texas shaped cookie cutter

Blend together butter and sugar.
Stir in egg and cream. Stir in lemon zest and flavoring.
Sift together the flour, salt and baking powder and and to mixture. Mix well.
Chill cookie dough 2 to 3 hours, or even better chilled overnight.

Roll out very thin and cut with Texas shaped cookie cutter.

Bake 8 to 10 minutes in a 375 degree F oven.

Makes about 5 dozen cookies.
