Fish And Chips

Meatless Friday - so it’s Fish and Chips Day today!

Potatoes cut steak-style and deep fried for 5 minutes at 325*.
Drain and cool completely - bring heat up to 365* F.
Fry until done.

Haddock fillets
first shallow dish - flour for coating

in bowl - more flour, salt, egg yolk, a drizzle of melted shortening and a tad of water - mix to smooth batter - fold in beaten (stiff) egg white

dip fish in batter - fry until done, turning once - drain

tartar sauce:
1-1/2 cups mayonnaise
2 tablespoon minced white onion
1 tablespoon minced kosher dill pickle
2 tablespoons minced sweet pickle
1 tablespoon minced celery
2 teaspoons minced pimiento
dash of Tabasco sauce
1 t White vinegar
1/2 teaspoon dry mustard
2 teaspoons fresh lemon juice
1 teaspoons Dijon mustard

riced cabbage
chipped carrot
riced purple cabbage
salad dressing

macaroni salad:
shell macaroni
miracle whip
prepared mustard
salt, pepper
shredded carrot
minced onion
minced celery
hard-cooked eggs

making sure there is enough coleslaw and macaroni salad for tomorrow!

and pass the malt vinegar!!!

Dear K.W. This sounds delicious, I copied all your stuff. One question…how do you rice cabbage? That macaroni salad sounds delicious. Can’t wait to try everything.

Do you have a ricer? I have several different types of gizmos that rice cabbage and carrots for me. You can also shred if you don’t want to rice. I like it riced at times - serves easy - like at KFC!
