Fish Chowder

FISH CHOWDER
2 1/2 lbs fresh haddock
1 lb butter
1 large onion, finely chopped
1 large carrot, shredded
4 stalks of celery, finely chopped
1/2 cup of fresh parsley, chopped
1/4 cup fresh dill, chopped
4 large potatoes diced and cooked
1 cup of flour
3 qts of 2% milk 2 cloves of fresh garlic, minced
1 teaspoon of fresh cracked black pepper
1 tablespoon of salt

Method:
Season fish with salt and pepper . Bake at 350 degrees,until done. Ina large pot, melt butter.Add onion ,celery, carrots,parsley, dill ,salt and pepper,garlic cook about 10 minutes. Add flour and cook untilthickens about 4 minutes,stir often. Gradually add milk and stir until it looks like light gravy. Fold in cooked fish and potatoes. Cook until the first simmer.Adjust salt and pepper to taste.
