Flat Bread Pizzas
Instead of [12-inch / 30-cm] pizza crust, you can use 4 [7-inch / 18-cm] pita breads or 6 split English muffins. If necessary, arrange onto 2 baking sheets; reduce baking time to 10 minutes but rotate after 5 minutes to evenly bake the pizzas.
1 tablespoon [15 mL] olive oil 1 small onion, thinly sliced 1 clove garlic, minced 1 cup [250 mL] cleaned fresh mushroom slices 1 small sweet green or red pepper, membranes removed and seeded, into strips 1/2 teaspoon [2.5 mL] basil 1/2 teaspoon [2.5 mL] oregano 1 [12-inch / 30-cm] prebaked pizza shell Approximately 1/2 cup [125 mL] pizza sauce 2 cups [450 g] shredded Mozzarella cheese Preheat oven to 400°F [200°C]. Into a non-stick skillet, heat olive oil over medium-high heat. Soften together onion slices, minced garlic, mushroom slices, sweet green or red pepper strips, basil and oregano stirring for approximately 4 minutes. Transfer pizza shell onto a baking sheet. Evenly spread pizza sauce all over pizza shell. Evenly top with seasoned mixed vegetables. Sprinkle all over with shredded Mozzarella cheese. Bake into preheated oven for approximately 20 minutes, to melt the cheese.
