I like meals and cookbooks. Period cookbooks recipes, menu suggestions, table settings and serving are the best sources. Unfortunately, most public libraries are not old cookbooks. Ask the librarian for help. I like meals.
When I was growing up my Mom would use leftover chicken or turkey and make what she called.
Chicken Spread-a-burgers. They were great and inexpensive. She also did a Cheese-burger spread-a-burger.
Chicken/Turkey Spread-a-Burgers
(amounts are to taste and adjustable to amount of poultry you have leftover so no amount totals are given.)
Leftover chicken or turkey, cut up into small pieces
Onion, chopped
Celery, chopped
Garlic, chopped (if desired)
1 can of Cream of Chicken Soup (or whatever Cream of you have on hand)
Hamburger Buns (or sliced bread if you don’t have buns on hand)
Mix ingredients together. You can add a bit of Milk if mixture looks a bit dry.
Toast buns or Bread until lightly brown. Top each bun half or slice of bread with mixture.
Place under broil until bubbly.
Note: If you have left over gravy it is great heated and served over Spread-a-burgers.
Cheeseburger Spread-a-Burgers
1 lb hamburger (or amount needed for your size family)
Onion, chopped
Celery, chopped
Green Pepper, chopped
1 can Cream of Mushroom soup
Sliced Cheese
Hamburger Buns or sliced Bread
Brown hamburger and drain. Mix ingredients together. Add a bit of milk if needed so it is not to dry.
Toast buns or Bread until lightly toasted. Top each bun half or bread slice with mixture. Top with a slice of cheese. Place under broiler until Cheese is melted.
You can add or subtract the type of ingredients you put in these recipes to what your family likes or dislikes. For instance, I would add a few chopped green olives to the hamburger mixture along with garlic.

I suggest you pasta with tomato sauce, in Italy is one of the cheapest meals and it fulfills a lot!
Instead of using Parmesan, you can use whatever cheese you like! It’s really cheap and tasty!
