FOUR PEPPER FRITATTA
22 1/2 ounces (weight) liquid or frozen whole egg
12 large California Fresh Eggs
1 medium green bell pepper
1 medium red bell pepper
1 medium yellow bell pepper
4 green onions, chopped
Break eggs into mixing bowl and scramble lightly.
Cut peppers into 1" long slivers.
SautÃ© onions and peppers in omelet pan.
Pour eggs over sautÃ©ed onions and peppers and cook until bottom is set.
Place under broiler for 1 minute or until eggs are set.
