Freezing for later

Hi all,

I am wondering about freezing certain things. Since I am now an empty-nester, and own a Seal-A-Meal (well the equivalent of it, anyway)… it would be nice to prepare things this way so I needn’t always “cook”. Also would like to be able to share with my daughters, who of course, miss my cooking!

I made some chicken breasts stuffed with asparagus and mushroom, which i served with a Pinot Grigio Cream sauce. Does anyone see a problem with freezing the assembled breasts uncooked (sauce separate of course) to go straight to the oven from the freezer?

I was trying to google this answer and found quite a few people talking about crepes they had frozen and insisting one needs to defrost them prior to baking. I’ve made spinach crepes for years, large batches that I freeze, i put them straight in the oven from the freezer. Am i missing something?

I was just afraid that if I cooked them first they will be too overdone in a reheat…which in my book has to be oven, not a fan of microwaved food!

The sauce is not difficult…just wondered if it stood up to freezing as I doubt my daughters will try whipping it up themselves.

Sounds to me like you make some special dishes.
So let’s face it. Sure, some things freeze well, some don’t. But one fact ya’ can never deny; Nothing tastes as good as fresh made. Especially, when its made with such care.
