FREEZING UNBAKED PIE CRUSTS
Sweet or short dough pie crusts, can stay in the freezer, unbaked for up to six months. Follow the recipe through placing the dough in the pan and crimping the edge. Wrap the pan in foil, then cover with a large plastic bag. Seal the bag and store in the freezer.
If you don’t want your pan tied up in the freezer, use disposable pie tins. Or after you freeze the crust, gently pry from the pan, rewrap and return to freezer; just remember to return it to the pan when ready to fill and bake.
You do not need to thaw the crust before baking; simply add a few minutes to the oven time.
