French Onion Soup

Ingredients:

3 Lbs red onions, sliced yes 3 Lbs
4Tbl. butter
3/4 cup red wine, a dry wine not sweet.
1 lg can 64 oz. chicken broth, or 64 oz of home made
1 tea salt & 1/2 tea pepper, correct salt & pepper to taste when soup is done.
4 slices of French bread, can use Italian bread that you slice yourself, the pieces are bigger with Italian bread.
3/4 cup grated Swiss cheese
2 Tlb chopped fresh parsley
3/4 tea thyme dries is fine. fresh is good if you have it.

In a large pot add butter when butter is hot add onions & sauté 30-40 minutes stirring often. Add wine, chicken broth, thyme, salt & pepper simmer 30 minutes covered. Butter bread slices & toast on a cookie sheet in a 350 oven a few minutes until golden brown. Add the cheese to the bread tops & continue to bake until cheese is bubbly. Pour soup in bowls & garnish each with the parsley. Serve a slice of the bread for dunking with each bowl of soup. Will serve 4 -6 depending on how hungry every one is, & the size of your bowls.

note…I make extra bread as my family loves to dunk.
