Fresh Apple Salsa

Makes about 3 cups

1-1/2 pounds Honey Crisp or Harrison apples, peeled, halved, cored and diced

1/2 cup minced green onions

2 tablespoons minced, seeded jalapeño chiles

1/3 cup fresh lime juice

2 tablespoons honey or agave syrup

1/4 cup chopped cilantro

Salt and freshly ground black pepper to taste.

In a medium bowl, toss all the ingredients together. This may be made up to 6 hours ahead.
