Fresh Asparagus with Lemon
(makes 12 servings)
3 pounds (1.4 kg) fresh asparagus, trimmed
1/3 cup (80 ml) fresh lemon juice
1 tablespoon (15 ml) finely grated lemon zest
freshly ground pepper to taste
- Place the asparagus in a steamer basket over a pot of simmering water. Steam, covered, until tender, about 7 minutes. Drain.
- Sprinkle with lemon juice and lemon zest. Season with pepper and serve at once.
