Fresh Tomato Salsa
Fresh and easy, this recipe yields about 5 cups of salsa. Reserve 1 cup for Quick Guacamole and still have enough to serve 8. If you like spicy salsa, use the full amount of jalapeños and add more cayenne pepper.
Ingredients:
4 cups diced tomatoes (5-6 medium)
3/4 cup finely diced red onion (about 1 small)
1/4 cup red-wine vinegar
1-2 jalapeños, seeded and minced
1/2 cup chopped fresh cilantro
1/2 teaspoon salt
Pinch of cayenne pepper, or more to taste
Combine tomatoes, onion, vinegar, jalapeño, cilantro, salt and cayenne in a medium bowl. Refrigerate until ready to serve.
Makes 10 servings, 1/2 cup each.
