FRIED CHEESE

FRIED CHEESE

Makes 4 dozen

4 ounces Cheddar or mozzarella cheese
2 eggs, beaten
1/3 cup fine dry bread crumbs
Shortening for deep frying

Cut cheese into 1/2-inch cubes. Dip in beaten eggs, then coat with crumbs. Repeat dipping and coating.
Chill coated cheese cubes for at least 30 minutes before frying.
Heat shortening to 365ºF in a deep saucepan or deep fryer.
Fry 6 coated cheese cubes at a time for 30 seconds or until golden brown.
Drain on paper towels. Serve hot.
